Step 1
Preheat the oven to 90 °C (195 °F), convection if possible. Cover a baking sheet with parchment paper.

In a bowl, beat the egg whites with a pinch of salt until they are fluffy.

When the egg whites start to foam, gradually add the powdered sugar while continuing to beat.

Add lemon juice. Beat until the meringue is firm, glossy and forms a peak.
Step 5
If desired, add food coloring or flavor gently.
Step 6
Transfer the meringue to a pastry bag. Pipe small cups on the baking sheet.
Step 7
Bake for 1.5 hours to 2 hours (depending on size), until they are dry to the touch.
Step 8
Let cool in the turned-off oven with the door open, to prevent them from cracking.
