  • 3 medium apples, peeled, cored and thinly sliced
  • 200g all-purpose flour
  • 150g white sugar
  • 100g melted butter
  • 2 eggs
  • 120ml milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon (optional)
  • A pinch of salt


  1. Preheat your oven to 180°C (gas mark 6). Grease and flour a medium-sized cake tin.
  2. In a large bowl, combine the flour, sugar, baking powder, cinnamon (if using) and salt.
  3. In a separate bowl, beat the eggs, then add the melted butter, milk and vanilla extract. Mix well.
  4. Stir the liquid ingredients into the dry ingredients, mixing just until combined. Be careful not to overmix to avoid a dense cake.
  5. Arrange a layer of apple slices on the bottom of the prepared tin. Pour half the batter on top. Repeat with another layer of apples and finish with the remaining batter.
