Ingredients

  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 2 medium tomatoes, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons vegetable oil
  • 3 cups water

Preparation

  1. Rinse the basmati rice in cold water until the water runs clear. Drain and set aside.
  2. Heat the oil in a large frying pan over medium heat. Add onion and sauté until golden.
  3. Add garlic and grated ginger and sauté for one minute.
  4. Stir in chopped tomatoes and simmer until tender.
  5. Add all the spices: turmeric, cumin, coriander, garam masala, chili powder and salt. Mix well.
  6. Add the basmati rice and stir until well coated with the spices.
  7. Pour the water into the pan and bring to the boil. Reduce the heat, cover and simmer for about 15-20 minutes, or until the rice is cooked and all the water has been absorbed.
  8. Remove from heat and let stand for a few minutes before serving.
