Butternut squash soup with bread roll



  • 1 butternut squash (approx. 1.5 kg)
  • 1 medium onion
  • 2 garlic cloves
  • 1 carrot
  • 2 stalks celery
  • 1 liter vegetable stock
  • 200 ml fresh cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 pinch nutmeg (optional)
  • 1 pinch cayenne pepper (optional)


  1. Vegetable preparation :
    • Peel and dice the butternut squash.
    • Chop the onion and garlic.
    • Cut the carrot and celery stalks into pieces.
  2. Cooking vegetables :
    • Heat the olive oil in a large saucepan over medium heat.
    • Add the onion and garlic, and sauté until translucent.
    • Add the carrot and celery and cook for about 5 minutes.
    • Add the diced butternut squash and stir well.
  3. Adding the broth :
    • Pour the vegetable stock into the saucepan.
    • Bring to the boil, then reduce heat and simmer for about 20-25 minutes, or until vegetables are tender.
  4. Mixing :
    • Use an immersion blender to puree the vegetables to a smooth consistency.
    • You can also transfer the cooked vegetables to a blender in several portions if required.
  5. Finish :
    • Add the crème fraîche to the soup and mix well.
    • Season with salt, pepper, nutmeg and cayenne pepper to taste.
    • Simmer for a further 5 minutes over low heat to blend the flavours.
  6. Service:
    • Serve the soup hot, garnished with a few fresh parsley leaves or croutons if desired.
