Prepare the dip
In a saucepan over medium heat, melt the butter. Add flour and stir until smooth. Gradually pour in beer and milk, stirring constantly. Bring to a boil, then reduce heat and add cheese, mustard, salt, and Cayenne pepper. Stir until cheese is completely melted.

Shape and boil the pretzels
Preheat the oven to 220°C (425°F). Divide the bread dough into small sections and shape into pretzels. Bring a large pot of water to a boil, add baking soda. Submerge each pretzel in boiling water for 30 seconds, then place on a baking sheet. Sprinkle with coarse salt.
The baking soda bath gives pretzels their characteristic golden crust.
Bake the pretzels
Bake in the oven for 12-15 minutes, or until golden brown. Serve immediately with the warm dip.
