  • 500g chicken breast or steak (cut into strips)
  • 1 red bell pepper (thinly sliced)
  • 1 green bell pepper (thinly sliced)
  • 1 red onion (minced)
  • 2 garlic cloves (chopped)
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 corn or wheat tortillas
  • Choice of toppings: sliced avocado, salsa, sour cream, grated cheese, fresh coriander, lime wedges


  1. Heat olive oil in a skillet over medium heat. Add chicken or steak strips and sauté until golden, about 5 minutes.
  2. Add the peppers, onion and garlic to the pan. Sauté for a few minutes until vegetables are tender-crisp.
  3. Sprinkle with chili powder, cumin, paprika, salt and pepper. Stir to coat and simmer for a further 2-3 minutes.
  4. Meanwhile, heat tortillas in another pan or in the microwave until warm and pliable.
  5. Top each tortilla with the chicken or steak and vegetable mixture. Add toppings of your choice.
  6. Roll up tortillas and serve immediately.
