500 g fresh asparagus

1 medium onion, chopped

2 garlic cloves, minced

2 tablespoons butter

3 cups (750 ml) vegetable or chicken broth

1 cup (250 ml) crème fraîche

Salt and ground black pepper, to taste

Optional: a drizzle of lemon juice for a touch of acidity


Start by preparing the asparagus. Trim off the tough, fibrous ends of the asparagus, then cut the stalks into 2-3 cm pieces.

In a large saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic. Sauté until translucent and lightly browned.

Add the asparagus pieces to the pan and sauté briefly with the onion and garlic, stirring regularly.

Pour the vegetable or chicken stock into the saucepan. Bring to the boil, then reduce the heat and simmer for about 15-20 minutes, until the asparagus is tender.
