Instructions
Cook the pasta according to instructions on the package.
In a large skillet, heat sesame oil over medium heat. Add mushrooms and cook for 3 to 4 minutes until tender.
Add soy sauce, brown sugar, and balsamic vinegar in the skillet and mix well.
Add green onions and red bell pepper in the skillet and cook for 1 to 2 minutes until softened.
Remove the skillet from heat and set aside.
In another skillet, heat olive oil over medium heat. Add chicken pieces and cook for 3 to 4 minutes until cooked through and slightly crispy.
Season with salt and pepper, then add a splash of soy sauce and mix well.
Add cooked pasta to the skillet with chicken and mix well.
Divide the pasta mixture between two plates.
Place half of the mushroom mixture on each plate.
Add cooked chicken pieces on each plate.
Crack an egg into a small bowl, then slide it into simmering broth.
Cook for 4 to 5 minutes for a runny yolk or longer if desired.
Garnish with sesame seeds and serve immediately.
