Instructions
Prepare the Vegetables
Slice the bell pepper, zucchini, and eggplant. Place them in a bowl, add olive oil and salt, mixing well to coat.
Add a splash of balsamic vinegar for a tangy kick.
Grill the Vegetables
On a hot grill, cook the vegetables for about 10 minutes, turning halfway, until tender and charred.
Use a grill pan if you don't have a grill.
Prepare the Bread
Preheat the oven to 390°F (200°C). Place the sub halves on a baking sheet and toast for a few minutes to crisp them up.
Watch the bread closely to prevent burning.
Assemble the Sub
Spread pesto or spicy mayo on each bread half, then layer the grilled vegetables and sprinkle with mozzarella.
Melt the Cheese
Return the subs to the oven to melt the cheese, about 5 minutes. Remove once the cheese is melted and lightly golden.
Serve
Once out of the oven, lightly pepper and serve the subs hot. Enjoy!
