Instructions
Prepare the Potatoes
Preheat the oven to 200°C (400°F). Wash the potatoes thoroughly, then slice them in half lengthwise. Scoop out a small amount from each half to create a cavity. Brush with olive oil and place on a baking sheet, cut side down. Bake for 20 minutes until golden.
Use a melon baller to scoop the potatoes more easily.
Cook the Beef
In a skillet over medium heat, cook the ground beef until well browned. Drain any excess fat. Set aside.
Add a bit of salt and pepper to season the beef.
Make the Special Sauce
In a small bowl, mix mayonnaise, relish, and mustard until smooth. Refrigerate until needed.

Assemble the Skins
