Preparing the filling
In a large bowl, combine the ground chicken with garlic, ginger, green onions (if used), Chinese cabbage (if used), soy sauce, sesame oil, oyster sauce, sugar, black pepper. Mix well to obtain a homogeneous filling. Let it marinate in the refrigerator for 15 to 20 minutes.
Forming the dumplings
Take a gyoza wrapper. Place about 1 tablespoon of filling in the center. Moisten the edges slightly with water, then fold in half. Press the edges firmly or fold to obtain a traditional shape.
Cooking the dumplings (3 methods)
➤ Frying in a pan (gyoza method) Heat 1 tablespoon of sesame oil in a large non-stick pan over medium heat. Add the dumplings (seam side down) and cook for 2 to 3 minutes until the bottom is golden. Add 1/4 cup of water, cover immediately and cook for 5 to 6 minutes until cooked through. Remove the lid, let the water evaporate, then serve. ➤ Steaming Steam in a steamer lined with parchment paper for 8 to 10 minutes. ➤ Boiling Place the dumplings in boiling salted water for 5 to 6 minutes until they float to the surface.
