  • 2 medium beets, peeled and grated
  • 2 potatoes, peeled and diced
  • 1 carrot, peeled and diced
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 400 g beef or pork, cubed
  • 4 cups beef or vegetable broth
  • 2 tablespoons cider vinegar
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • Salt and ground black pepper to taste
  • Sour cream (optional), for garnish
  • Fresh dill (optional), for garnish

Preparation

  1. In a large saucepan, heat a little oil over medium heat. Add the onions and garlic, and sauté until tender and lightly browned.
  2. Add the cubed meat to the pan and sauté until browned on all sides.
  3. Add the grated beets, potatoes, carrots, beef or vegetable stock, cider vinegar, tomato paste and bay leaf to the pan. Season to taste with salt and ground black pepper.
  4. Bring to the boil, then reduce heat and simmer over low heat for about 45 minutes to 1 hour, or until vegetables are tender and meat is cooked.
  5. Remove the bay leaf from the soup and adjust the seasoning if necessary.
  6. Serve hot, garnished with sour cream and fresh dill if desired.
