- 2 cups cooked lentils
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 carrot, grated
- 1 stalk celery, finely chopped
- 1 cup rolled oats
- ½ cup breadcrumbs
- 2 tablespoons vegetarian Worcestershire sauce
- 2 tablespoons ketchup
- 1 tablespoon Dijon mustard
- 1 tablespoon soy sauce
- 1 tablespoon tomato paste
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried thyme
- Salt and ground black pepper to taste
- 2 tablespoons olive oil
- Preheat oven to 180°C (gas mark 6). Lightly grease a loaf tin.
- Heat the olive oil in a frying pan over medium heat. Add the onion, garlic, carrot and celery, and sauté until tender, about 5 minutes. Allow to cool slightly.
- In a large bowl, combine the cooked lentils, sautéed vegetables, rolled oats, breadcrumbs, vegetarian Worcestershire sauce, ketchup, Dijon mustard, soy sauce, tomato paste, parsley, thyme, salt and pepper.
- Transfer the mixture to the prepared loaf tin and press firmly to form a meatloaf.
- Bake in preheated oven for 45 minutes, or until meatloaf is golden brown and firm to the touch.
- Allow to cool slightly before slicing and serving.
