Beer-Braised Ham in a Slow Cooker

Preparation of the ham
If your ham is very salty (often the case with smoked hams), rinse it under cold water and let it soak in water for an hour. Drain before cooking. Remove the skin if present, but leave a thin layer of fat for cooking.
Assembly in the slow cooker
Place the onion and garlic at the bottom of the slow cooker. Place the ham on top, fat side up. In a bowl, combine the beer, maple syrup, Dijon mustard, Worcestershire sauce, spices, and herbs (if used). Pour this mixture over the ham.
Slow Cooking
Cover and cook at low temperature for 6 to 8 hours (depending on the size of the ham). The meat should be tender and flake easily with a fork. For a caramelized glaze, you can transfer the ham to a baking dish and broil it under the broiler for 5-7 minutes with additional maple syrup.
