Step 1
Preheat your oven to 180°C (thermostat 6). Lightly grease a loaf pan.

In a skillet, heat olive oil over medium heat. Add onion, garlic, carrot, and celery, and sauté until tender, about 5 minutes. Let cool slightly.

In a large bowl, combine cooked lentils, sautéed vegetables, instant oats, breadcrumbs, vegetarian Worcestershire sauce, ketchup, Dijon mustard, soy sauce, tomato paste, parsley, thyme, salt, and pepper.
Step 4
Transfer the mixture to the prepared loaf pan and press firmly to form a meatloaf.
Step 5
Bake in preheated oven for 45 minutes, or until the meatloaf is golden brown and firm to the touch.
Step 6
Let cool slightly before slicing and serving.
