Preheat the oven to 160 °C. Place the ham in a roasting pan.
Add a small amount of hot water (or stock) to the bottom of the pan to keep moisture.
Cover and bake for 1½ hours, basting every 20–30 minutes.
Make the glaze: whisk together maple syrup, Dijon mustard, apple cider vinegar, and pepper.
Uncover the ham. Brush generously with glaze and return to the oven for 10 minutes.
Repeat glazing 2–3 times, every 10 minutes, to build caramelized layers.
Optional finish: broil for 3–5 minutes for extra shine—watch closely.
Maple glaze can burn quickly under the broiler.
Rest 10 minutes before slicing to keep it juicy.
