  1. Preparing the pastry dough (homemade)

    In a bowl, combine flour and salt. Add cold butter in small pieces and crumble with fingers or a pastry cutter until you obtain a granular texture. Gradually incorporate cold water to form a homogeneous ball. Wrap in plastic wrap and refrigerate for 20 minutes.

  2. Preparing the apples

    Peel, core and slice the apples thinly (or cut into small cubes if you prefer a more tender texture). In a bowl, mix apple slices with lemon juice, sugar, cinnamon, nutmeg and melted butter. Let marinate while preparing tartlet bases.

  3. Assembling the tartlets

    Preheat oven to 180°C (350°F). Roll out the dough on a lightly floured surface. Cut circles slightly larger than your tartlet molds (or use muffin tins for mini versions). Press the dough into the molds, prick the bottom with a fork. Generously fill with prepared apples. Brush the top with a little maple syrup or honey for a shiny finish.

  4. Baking

    Bake for approximately 30 minutes, or until apples are tender and crust is golden. Let cool before unmolding. Serve warm or at room temperature.
