  1. Baking the Potatoes

    Preheat the oven to 200°C (400°F). Thoroughly wash the potatoes and prick them with a fork. Wrap each individually in aluminum foil and bake for about 1 hour, or until tender.

  2. Preparation of Sloppy Joe

    While the potatoes are baking, heat olive oil in a medium pan over medium heat. Add onion and garlic, sauté for 2 minutes, then add red bell pepper and ground beef. Cook until beef is well browned. Add tomato sauce, ketchup, mustard, Worcestershire sauce, and brown sugar. Season with salt and pepper. Simmer over low heat for 10 minutes, stirring occasionally.

  3. Preparation of Lime and Parsley Sauce

    In a small bowl, combine sour cream, lime juice, chopped parsley, salt, and pepper. Chill until ready to use.

  4. Assembly of Stuffed Potatoes

    Remove the potatoes from the oven and cut them open in quarters without separating completely. Place them in a bowl. Add a pat of butter on each potato, salt and pepper to taste. Generously sprinkle with a mixture of 3 shredded cheeses. Cover with hot Sloppy Joe.

  5. Finishing Touches and Service

    Drizzle lime and parsley sauce on top. Serve immediately and enjoy!
