Step 1
Prepare the asparagus. Start by washing the asparagus, then remove the tough and fibrous ends. Cut the stalks into pieces about 2 to 3 cm long.

Sauté the aromatics. In a large saucepan, melt the butter over medium heat. Add finely chopped onion and minced garlic. Sauté until they become translucent and lightly browned.

Cook the asparagus. Add the asparagus pieces to the saucepan. Sauté for a few minutes with the onion and garlic, stirring regularly to coat them well.

Add broth. Pour vegetable (or chicken) broth over the vegetables. Bring to a boil, then reduce heat. Simmer covered for 15 to 20 minutes, until asparagus are tender.

Blend the soup. Remove the saucepan from heat. Blend the mixture using an immersion blender until smooth. You can also use a blender by processing in small batches.

Add cream and season. Return the soup to heat if needed. Add heavy cream, then season with salt and freshly ground black pepper. For a tangy note, add lemon juice.

Warm gently. Warm the soup over low heat for a few minutes, stirring occasionally without boiling.
