4 brioche burger buns
4 ground beef patties (125 g each, ideally 80% lean / 20% fat)
4 slices mozzarella cheese
8 slices bacon
Leaf lettuce (a few leaves)
8 tomato slices
1 white onion, sliced (optional)
Salt and pepper to taste
4 tbsp. mayonnaise
1 tablespoon ketchup
1 tsp. Dijon mustard
1 tsp. smoked BBQ sauce (Bull's-Eye or homemade)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 tsp pickle juice (optional but recommended)
Prepare the A&W style sauce:
In a small bowl, combine all sauce ingredients. Taste and adjust to taste (more smoky, spicy or sweet). Set aside in a cool place.
Cook the bacon :
Cook bacon slices in a skillet until crisp. Drain on paper towels.
Shape and bake the patties:
Season patties with salt and pepper. Cook in a hot pan or on the BBQ for 3 to 4 minutes on each side. Add a slice of mozzarella to each patty at the end of cooking to melt it.
Toast the bread:
Cut loaves in half and toast lightly on a pan or grill, crumb side down.
Assemble the Mozza burgers:
Spread the sauce on both sides of the bread.
Place a lettuce leaf on the base, followed by the cheese patty, bacon, tomatoes and onion.
Close with the bread on top.

Vegetarian Mozza : Replace the beef patty with a veggie patty (Beyond Meat or homemade) and use veggie bacon.
