
Homemade Oven-baked Beef Wellington
Instructions
Step 1
Preheat your oven to 200°C (thermostat 6-7).

Ensure the beef roast is at room temperature. Season generously with salt and pepper on all sides.

In a skillet, heat olive oil over medium heat. Add shallots and garlic, sauté until they are translucent.

Add finely chopped mushrooms to the skillet and sauté until golden brown and all the water they have released has evaporated. Season with salt and pepper.

Roll out the puff pastry on a lightly floured surface until it is approximately 3 mm thick. Brush the pastry with Dijon mustard.

Spread a uniform layer of sautéed mushrooms over the puff pastry.

Place the beef roast in the center of the puff pastry and mushrooms.

Wrap the beef roast in the puff pastry, making sure to seal the edges. Remove any excess pastry if necessary.

Place the Beef Wellington on a greased baking sheet. Brush the surface of the pastry with beaten egg for a golden brown finish.

Bake in the preheated oven for about 40 to 45 minutes, or until the pastry is golden brown and crispy, and the internal temperature of the beef reaches approximately 55°C for a rare cook, or to your desired level of doneness.

Once cooked, remove the Beef Wellington from the oven and let it rest for a few minutes before slicing and serving.
