In a bowl, whisk together eggs, milk, sugar, vanilla extract, cinnamon and salt until smooth.
Quickly dip each slice of bread into the mixture on both sides, so that they are thoroughly soaked but not too soggy.
Heat a large frying pan over medium heat and melt the butter.
Place the soaked bread slices in the pan and cook for 2-3 minutes on each side until golden brown.
Serve warm with maple syrup, fresh-cut fruit, a touch of powdered sugar or even a dollop of Greek yogurt for a creamy texture.
