Instructions
Prepare the Chiles
Toast the guajillo and ancho chiles in a dry pan until fragrant. Remove seeds and roughly chop.
Wear gloves if your skin is sensitive to chili oils.
Sear the Beef
Heat the oil in a large pot. Sear the beef on all sides until well browned. Remove and set aside.
Don't overcrowd the pot to ensure a nice golden crust.
Make the Sauce
In the same pot, add garlic and chiles. Sauté for 2 minutes. Add broth, vinegar, and cumin. Bring to a boil.
This step allows the flavors to fully develop.
Braise the Beef
Return the beef to the pot. Cover and simmer on low heat for 2 hours until meat is tender.
Check the liquid level regularly and add more broth if necessary.
Assemble the Tacos
Warm tortillas in a pan with some consommé. Fill with beef, cheese, cilantro, and some consommé.
Dip the tortillas quickly to avoid tearing.
Serve
Serve immediately with lime wedges. Dip each taco in the consommé before enjoying.
Add spicy salsa for extra heat.
