  • Mix first with a spoon, then knead by hand for about 8-10 minutes, until the dough is soft, homogeneous and slightly elastic.

3. First lift

  • Form the dough into a ball and place in a lightly oiled bowl.

  • Cover with a clean cloth and leave to rise in a warm place for about 1 hour, until the dough doubles in volume.

4. Dough shaping

  • Deaerate the dough slightly by pressing with your hands.

  • Divide into two equal balls (or keep whole as required).

  • Cover with a damp cloth and leave to stand for a further 20-30 minutes.

5. Roll out the dough

  • On a lightly floured surface, roll out the dough using a rolling pin or directly by hand, to the desired shape.

  • Garnish as desired with your favorite sauce and toppings.
