3 cups (450 g) all-purpose flour (or bread flour)
1 cup (250 ml) lukewarm water (approx. 38°C or 100°F)
1 sachet (7 g) active dry or instant yeast
2 tablespoons extra-virgin olive oil
1 teaspoon sugar
1 teaspoon fine salt
In a bowl, combine warm water, yeast and sugar.
Leave to stand for about 10 minutes, until the yeast forms a light foam on the surface (proof of activation).
Pour flour and salt into a large bowl. Mix quickly.
Add water, yeast and olive oil.
Mix first with a spoon, then knead by hand for about 8-10 minutes, until the dough is soft, homogeneous and slightly elastic.
Form the dough into a ball and place in a lightly oiled bowl.
Cover with a clean cloth and leave to rise in a warm place for about 1 hour, until the dough doubles in volume.
Deaerate the dough slightly by pressing with your hands.
Divide into two equal balls (or keep whole as required).
Cover with a damp cloth and leave to stand for a further 20-30 minutes.
On a lightly floured surface, roll out the dough using a rolling pin or directly by hand, to the desired shape.
Garnish as desired with your favorite sauce and toppings.
Optimum lifting : To speed up rising time, place your dough near a source of gentle heat, or in a warm oven that has been turned off.
Crispy texture : Add fine semolina to the flour (about 20 %) for a crispier crust.
