4 large yellow onions, thinly sliced

3 tablespoons butter

2 tablespoons flour

1.5 liters beef stock

120 ml dry white wine (optional)

Salt and ground black pepper, to taste

4 slices baguette bread

200 g grated Gruyère cheese

Preparations

  1. In a large saucepan, melt the butter over medium heat. Add the sliced onions and cook slowly until golden and caramelized, about 30 to 40 minutes.
  2. Sprinkle the cooked onions with flour and mix well. Leave to cook for a few minutes to eliminate the taste of the flour.
  3. Gradually pour the hot beef stock into the saucepan, stirring constantly to avoid lumps. Add white wine, if desired, for a richer flavor.
  4. Simmer the soup over low heat for about 20-30 minutes to allow the flavours to develop. Season to taste with salt and pepper.
  5. Divide the soup between ovenproof bowls. Place a slice of baguette bread on top of each bowl.
  6. Sprinkle grated Gruyère cheese generously over the top of the bread slices.
  7. Place the bowls under the hot grill for a few minutes, until the cheese is melted and golden.
