    Step 1

    Preheat your oven to 180°C (gas mark 6) and lightly butter a cake tin.

    In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon and salt.

    In a separate bowl, beat eggs lightly. Add oil and vanilla extract. Mix well.

    Gradually incorporate the dry ingredients into the liquid ones, stirring gently until you obtain a homogeneous paste.

    Add the grated carrots to the dough and mix well. If you're using walnuts, hazelnuts or raisins, add them at this stage and mix them into the dough.

    Pour the batter into the cake tin and smooth the top with a spatula.

    Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted in the center of the cake comes out clean.

    Remove the cake from the oven and let it cool in the tin for about 10 minutes, then transfer it to a wire rack to cool completely.

    Once the cake has cooled completely, you can dust the top with powdered sugar for decoration, if you wish.
