Cook the base: In a large saucepan, sauté the onion and garlic in oil for 5 minutes. Add the tomatoes, vinegar, sugar, salt, and spices.

Simmer: Cook on medium-low heat for approximately 45 to 60 minutes, stirring regularly. The tomatoes should be well reduced.

Blend: Use a manual blender or a food processor to achieve a smooth texture.
Step 5
Add consistency if necessary: Return to the saucepan, add tomato puree (optional) and cook for an additional 5 to 10 minutes.
Step 6
Store in jars: For hot ketchup in sterilized jars. Seal tightly. Store in the refrigerator for up to 3 weeks, or several months if well preserved.
