2 large fresh cucumbers
1 teaspoon salt
2 tablespoons rice vinegar (or white vinegar)
1 tablespoon sesame or olive oil
1 teaspoon sugar
1 clove garlic, finely chopped
1 tablespoon soy sauce (optional for Asian cucumber salad)
1 pinch chili flakes (optional)
A few fresh coriander or mint leaves
Preparing the cucumber
Wash cucumbers and remove ends.
Cut into thin slices or sticks, depending on whether you prefer a traditional or modern cucumber salad.
Salt and let drain
Place the slices in a bowl and add the salt.
Leave for 10 minutes to drain, then drain.
Prepare the vinaigrette
Combine vinegar, oil, sugar, garlic and soy sauce.
