Preparation of the scallops: Sauté the scallops for 2 to 3 minutes in a pan with a little butter. Reserve.

Cooking of the filling: In the same pan, sauté the shallots, then add the mushrooms. Season with salt and pepper, cook until the water evaporates.

Deglaze: Pour white wine into the pan and reduce for 5 minutes over medium heat.

Prepare the béchamel sauce: Melt the butter in a saucepan, add the flour while stirring. Gradually incorporate the hot milk to obtain a smooth sauce. Season with salt, pepper and nutmeg. Add the cream.

Assemble: Mix the sauce with the mushrooms, shallots and scallops. Distribute everything in the shells (or ramekins). Sprinkle with grated cheese (and breadcrumbs if desired).

Bake: Bake for 15-20 minutes at 200°C (400°F) until the top is golden.
