  • Salt and pepper to taste
  • 1 pinch nutmeg (optional)
  • 1 pinch cayenne pepper (optional)

Preparations

  1. Vegetable preparation :
    • Peel and dice the butternut squash.
    • Chop the onion and garlic.
    • Cut the carrot and celery stalks into pieces.
  2. Cooking vegetables :
    • Heat the olive oil in a large saucepan over medium heat.
    • Add the onion and garlic, and sauté until translucent.
    • Add the carrot and celery and cook for about 5 minutes.
    • Add the diced butternut squash and stir well.
